This video, via subaqueousmusic, explores how to use drums to trigger MIDI in Ableton Live.
In the video, Ableton Certified Trainer Isaac Cotec discusses how he uses piezo microphones to capture the sound from the drums, and converts the sound to MIDI using a plugin in Live.
The key to this is using KTdrum trigger, a free VST is for Windows and Mac. It lets incoming audio be turned into MIDI messages. For mics, he some cheap piezo mics from Amazon.

This is a very old plugin. The Smartelectronix website even says that the Mac version only works on PPC-based Macs. Wow.
