Not mentioned in the video: The envelope controlling the lowpass filter is set with high attack, decay, sustain, and release. The pitch VC to the lowpass filter is inverted but heavily attenuated. No resonance and the notch filter was turned all the way down.

Here’s an demo of the GCe2 (Gestural Controller – Exploration 2) in use with an application called GestureSynth. Tilting to the left and right lowers and raises the pitch, respectively. Tilting back applies a chorus effect, and squeezing the expression pads on the side creates a flange.
