  1. He's using a sequencer to control the x-y pad instead of his finger (using MIDI control change signals)

    He has one of the "loop" presets, which is an FX preset where it temporarily loops incoming audio using the x-y pad

    This creates the weird stuttering and I'm assuming "drum roll" like effects you hear. And it's all controlled externally, so he can do other stuff with his hands.
